Let’s make homemade Shio-Koji / Soy sauce-Koji!

Shio-Koji

<Ingredients>
 
MiSoLa Rice-Koji 100g
Salt 30g
Water 100cc
Container or Jar (Wash and dry)

<Steps>

1. Take the rice-koji from the package and loosen it so that there are no lumps.
Mix with salt.

2. Put it into the container or jar and pour water and mix well.
Keep it in the room temparture for a week.
Mix once a day. Please do not close the lid tight.

3. After a week you can start to use it!
Please move into the fridge and it will last 4-6 months.

(We recommend to mix sometime. Once a month or so).

Soy sauce-Koji

<Ingredients>

MiSoLa Rice-Koji or Barley-Koji 100g
Soy sauce 100cc

Container or Jar (Wash and dry)

<Steps>

1) Take the rice-koji from the package and loosen it so that there are no lumps. Put it into the container or jar. (Container by MUJI / PP Lunch Box with Valve 175ml)

2. Pour soy sauce and mix with spoon.
Keep it in the room temparture for a week.
Mix once a day. Please do not close the container tight.

3. After a week you can start to use it!
If it seems not enough liquid, pour a little bit soy sauce.
Please put into the fridge and it will last 4-6 months.

(We recommend to mix sometime. Once a month or so!)
